Hand harvested, part whole bunch, part destemmed, a blend of Syah juice made in 2 different styles, one freshly picked with a short maceration and other part picked later with a longer maceration. Both styles semi – carbonic ally macerated. Basket pressed and aged in old Oak barrels for 9 months. No yeast inoculation or additives apart from a small amount of SO2. Medium filtered at bottling.
