Hand harvested, 100% destemmed and semi carbonic ally macerated for 10 days in a stainless-steel tank. Basket pressed and matured in Oak barrels for 7 months before bottling. No yeast inoculation or additives apart from a small amount of SO2. Lightly filtered.
